Brazilian Fluffy Coconut Cake
Ingredients
Cake batter
- 3 eggs
- 4 tablespoons margarine
- 1 1/2 cups sugar
- 2 cups all-purpose flour
- 1 cup cornstarch
- 1 bottle coconut milk
- 1 cup milk
- 1 tablespoon baking powder
Topping
- Condensed milk
- Shredded coconut (optional)
Preparation
Beat eggs, sugar, and margarine in a mixer until a light cream forms
Add flour, cornstarch, coconut milk, and milk; beat until the mixture is fluffy, then add baking powder and mix
Place the batter in a greased pan
Bake in a 200Β°C oven until golden and the toothpick test comes out clean
Poke holes in the cake and pour condensed milk over the hot cake; if desired, add shredded coconut
Notes
Note: 1 cup = 250 ml (standard requeijΓ£o cup)
Use a 36x5 cm pan
