Brazilian Fluffy Coconut Cake

Ingredients

Cake batter

  • 3 eggs
  • 4 tablespoons margarine
  • 1 1/2 cups sugar
  • 2 cups all-purpose flour
  • 1 cup cornstarch
  • 1 bottle coconut milk
  • 1 cup milk
  • 1 tablespoon baking powder

Topping

  • Condensed milk
  • Shredded coconut (optional)

Preparation

  1. Beat eggs, sugar, and margarine in a mixer until a light cream forms

  2. Add flour, cornstarch, coconut milk, and milk; beat until the mixture is fluffy, then add baking powder and mix

  3. Place the batter in a greased pan

  4. Bake in a 200Β°C oven until golden and the toothpick test comes out clean

  5. Poke holes in the cake and pour condensed milk over the hot cake; if desired, add shredded coconut

Notes

  1. Note: 1 cup = 250 ml (standard requeijΓ£o cup)

  2. Use a 36x5 cm pan
