Easy Brazilian Sweet Corn Cake
Ingredients
- 1 can corn, drained
- 1 can milk
- 1 can sugar
- 1 can cornmeal
- 1/2 can soybean oil
- 3 whole eggs
- 50g grated parmesan cheese
- 1 tablespoon baking powder
Optional add-ins
- 2 tablespoons shredded coconut
For the pan
- margarine
- wheat flour
Preparation
Drain the corn and use the corn can for all measurements
Grease and flour a bundt pan and preheat the oven to medium heat
Place the drained corn, milk, sugar, cornmeal, soybean oil, eggs, and grated parmesan cheese in a blender and blend until smooth
If desired, add shredded coconut and pulse to combine
Add the baking powder and pulse the blender three times
Pour the batter into the prepared pan
Bake until a toothpick inserted in the center comes out clean
