Easy Brazilian Blender Chilled Cake

Ingredients

Batter

  • 5 whole eggs
  • 1 cup (200ml) milk
  • 2 cups (200ml) all-purpose flour
  • 2 cups (200ml) sugar
  • 2 tablespoons margarine
  • 1 heaping tablespoon baking powder

Filling and topping

  • 1 can sweetened condensed milk
  • 100g shredded coconut
  • 200ml coconut milk
  • 1 tablespoon cornstarch
  • 2 tablespoons butter

Syrup

  • 200ml coconut milk
  • 1/2 cup milk
  • 4 tablespoons sugar

Preparation

  1. Blend the batter ingredients in a blender, adding liquid ingredients first

  2. Pour the batter into a greased and floured rectangular pan

  3. Bake in a medium oven for about 40 minutes

  4. Remove from oven, let cool, then unmold and cut the cake in half lengthwise

Topping

  1. In a saucepan, cook the sweetened condensed milk, shredded coconut, coconut milk, cornstarch, and butter over medium heat until thickened

Assembly

  1. Place one cake layer in a dish and pour half of the mixed syrup over it

  2. Spread half of the topping over the cake layer

  3. Place the second cake layer on top

  4. Pour the remaining syrup over the top layer

  5. Spread the remaining topping over the cake

  6. Decorate with shredded coconut

  7. Cut into squares, wrap each square in aluminum foil, and refrigerate for 3 hours
