Traditional Brazilian Coconut Cake
Ingredients
- 1 can sweetened condensed milk
- 1 can whole milk
- 1 bottle coconut milk
- 1 can all-purpose flour
- 1/2 can granulated sugar
- 3 large eggs
- 3 tablespoons margarine
Glaze
- 1 bottle coconut milk
- 2 tablespoons granulated sugar
- 1 package shredded coconut
Preparation
Preheat oven to 350Β°F (180Β°C)
In a blender, add eggs and blend for one minute
Add liquid ingredients and blend until smooth
Add dry ingredients and blend for a few minutes
Pour into a greased and floured tube pan
Bake in preheated oven at 350Β°F (180Β°C) until golden brown, testing with a toothpick to check for doneness
Glaze
In a saucepan, combine coconut milk, sugar, and shredded coconut
Stir and cook over medium heat until thickened
When thickened, remove from heat
Pour the glaze over the cake and serve
Notes
This cake does not require baking powder
