Classic Brazilian Creamy Cornmeal Cake

Ingredients

  • 4 eggs
  • 3 cups whole milk
  • 2 cups sugar
  • 1 1/2 cups fine cornmeal
  • 2 tablespoons unsalted margarine
  • 50 grams grated Parmesan cheese
  • 2 tablespoons cream cheese
  • 1 1/2 tablespoons all-purpose flour
  • 1 tablespoon baking powder

Preparation

  1. In a blender, blend all ingredients except the baking powder

  2. Transfer the batter to a bowl, add the baking powder and mix

  3. Pour the batter into a large tube pan or two small ones, greased with margarine and dusted with all-purpose flour and cornmeal

  4. Bake in a preheated oven at 180Β°C for about 35 minutes or until golden brown

  5. Let cool, unmold and serve
