Classic Portuguese Ham and Cheese Pie
Ingredients
Crust
- 2 cups milk
- 1/2 cup olive oil
- 2 eggs
- 3 cups all-purpose flour
- 50g grated parmesan cheese
- 2 teaspoons salt
- 2 teaspoons baking powder
- Margarine, for greasing
- Flour, for dusting
Filling
- 1 cup cubed mozzarella cheese
- 1 cup cubed ham
- 2 seeded tomatoes, diced
- 1/2 cup peas
- 1 onion, thinly sliced
- 2 hard-boiled eggs, sliced
- 1/2 cup sliced green olives
- Salt, to taste
- Olive oil, for drizzling
Preparation
In a blender, blend the milk, olive oil, eggs, flour, parmesan, and salt until smooth
Gently fold in the baking powder and spread the batter in a greased and floured 30cm diameter pan
On top of the batter, spread the mozzarella, ham, tomato, peas, onion, eggs, and olives
Sprinkle with salt, drizzle with olive oil, and bake in a preheated medium oven for 30 minutes or until baked and lightly golden
Let cool, unmold, and serve
