Juicy Toasted Sesame Chilli Chicken
Ingredients
- 1 tandoori-sized chicken (or a small roaster)
- 3 tsp sesame seeds
- 2 large dried red chillies
- 2 tbsp oil
- 1 tsp salt
- 1 tsp minced ginger
- 1 tsp minced garlic
- 1 tsp paprika
- 1 tsp mixed curry powder
- 1/2 tsp chilli powder
- 1/4 tsp food colouring (or extra paprika)
Preparation
Lightly toast the sesame seeds in a dry pan until they turn light brown. Grind the sesame seeds along with the 2 large dried red chillies in a spice grinder or use a pestle and mortar.
In a bowl, combine the oil, salt, minced ginger, minced garlic, paprika, mixed curry powder, chilli powder, and the ground sesame-chilli mixture. Mix these ingredients to create a thick paste.
Apply the paste to the exterior of your chicken, whether it's skinned or skinless. Allow the chicken to marinate with the paste for at least 30 minutes before cooking.
Preheat the oven to gas mark 6 (392°F or 200°C). Cook the marinated chicken in the oven for 1 to 1 hour 20 minutes, or until the chicken is fully cooked and the juices run clear.
Serve the toasted sesame chilli chicken with your choice of accompaniment, such as rice, pilau, chips, or mashed potatoes, and savor the flavors!
