Simple 5-Ingredient Chickpea Curry

Ingredients

  • 2 tins of legumes (e.g., chickpeas, kidney beans, lentils, sweetcorn, butter beans)
  • 1 onion
  • Tomatoes (tinned, fresh, or purée)
  • Garlic
  • Ginger (optional)
  • Curry powder

Preparation

  1. Finely chop and add the onion in a little oil on medium heat until soft and brown; burning on edges is okay for smoky flavor.

  2. Mince or finely grate and add garlic and ginger to the onion and stir for a minute.

  3. Add the tin of chickpeas and tomatoes; if using purée or fresh, add 1/2 pint of water too.

  4. Add 2 teaspoons curry powder and salt to taste.

  5. Simmer for about 20 minutes on low heat with lid on; stir every 5 minutes and add water to adjust consistency as required. Serve with rice, quinoa, bread, flatbreads, or pitta.
