Pakistani Chickpea Curry
Ingredients
- 2 cups of cooked chickpeas
- 1 onion chopped
- 2 tomatoes ground in a blender
- 1/2 tablespoon minced ginger
- 1/2 tablespoons crushed garlic
- 1/3 cup tomato paste (possible to use pasata sauce)
- 2 tablespoons oil
- 2 large potatoes diced and boiled
- 1/4 cup apple cider vinegar (or lemon)
- 1 teaspoon cayenne pepper or red pepper
- 1 teaspoon curry powder
- 2 teaspoons cumin and ground coriander
- salt and pepper as needed
- 1 teaspoon turmeric
- 2 cups hot water
Preparation
Heat oil and sauté onion
Add garlic and ginger
Add the tomato and tomato paste and cook until we see the oil separate
Add all spices and mix
Add half a cup of water and mix
Add potatoes and chickpeas
Add vinegar, coriander and the rest of the water and mix on high heat
Reduce heat to low and cover the pot and leave them for 10 minutes then enjoy
