Quick and Easy Creamy Scrambled Tofu

Ingredients

  • 1 large yellow onion
  • 2 garlic cloves
  • 1 tbsp olive oil
  • 2 tbsp water
  • 500 g firm natural tofu
  • 1 tsp turmeric
  • 1 tsp vegetable bouillon powder
  • 3 tbsp nutritional yeast
  • 200 ml creamy coconut milk
  • Salt and black pepper

Optional herbs

  • 3 tbsp chopped chives
  • 3 tbsp chopped parsley

Preparation

  1. Chop the onion and garlic.

  2. Heat the frying pan, add olive oil and onions.

  3. Add a little water to help the onion soften without adding more oil.

  4. Sauté on low-medium heat for 6-7 minutes until the onion has softened and starts to turn golden.

  5. Add finely chopped garlic and fry for 1 minute.

  6. Meanwhile, open the tofu package, discard the brine, and rinse the tofu block under running water for a few seconds.

  7. Put the tofu in a bowl and mash it with a fork until crumbly.

  8. Add turmeric, vegetable bouillon powder, nutritional yeast, and coconut milk, then stir.

  9. Pour the tofu mixture into the frying pan when the onions are done.

  10. Let it simmer for 2 minutes while stirring.

  11. Take off heat and stir in chopped herbs, salt, and black pepper.
