Tofu Scramble with Four Ingredients
Ingredients
- 6 ounces firm or extra firm tofu
- 1/4 cup white onion, diced
- 2 cloves garlic, minced
- juice of 1/2 lemon
- 1 tbsp olive oil
Seasoning
- 1/4 cup nutritional yeast
- salt, to taste
- pepper, to taste
Preparation
Heat the olive oil in a small skillet over medium-high heat. Add diced onion and garlic and sauté until golden and fragrant, 2-3 minutes.
While onions are sautéing, crumble the tofu in a small bowl with your fingers. Stir in the lemon juice and spices of your choice (pepper and nutritional yeast is recommended). Add tofu mixture to onions and cook for 2-3 more minutes, until tofu is heated all the way through. Taste and adjust seasonings.
Serve immediately with fresh chives or homemade salsa.
