Avocado Pesto Pasta
Ingredients
- 12 ounces of pasta, cooked according to the back of the package
- 1 large avocado, pitted and the insides scooped out
- 1 cup of fresh basil
- 1/3 cup walnuts
- 1 small lemon, seeded and juiced
- 1/2 cup of olive oil
- 1 tbsp chopped garlic
- 2 tbsp nutritional yeast
- 1/2 tsp salt
- 1/4 tsp pepper
Preparation
Cook pasta according to package, drain, and set aside
In a high powered blender or food processor combine the avocado, fresh basil, walnuts, lemon juice, olive oil, nutritional yeast, garlic, salt, and pepper. Pulse ingredients until it becomes a creamy sauce
Toss cooked pasta with the Avocado Pesto Sauce and eat immediately
