Southwest Veggie Tofu Scramble

Ingredients

  • 1/4 onion, chopped
  • 1 garlic clove, minced
  • 1/2 jalapeño, chopped
  • 1/2 C green beans, sliced
  • 1/2 C sweet corn
  • 1/2 C cherry tomatoes
  • 8 oz extra firm tofu
  • 2 TBSP nutritional yeast
  • 1/2 tsp black lava salt
  • 1 tsp tamari or coconut aminos
  • 1/8 tsp turmeric
  • 1/2 tsp cumin, paprika, oregano, and chili powder
  • 1/2 C black beans
  • handful of cilantro

For serving

  • massaged kale
  • hot sauce
  • avocado

Preparation

  1. Sauté veggies in a cast iron skillet over medium low heat for 3-4 minutes until tender. Add in tomatoes last.

  2. Add tofu to skillet and use the back of a wooden spoon to mash. Add all seasonings and scramble to combine. Stir in cilantro and black beans and heat through.

  3. Serve hot alongside massaged kale, tortillas, toast, or whatever you fancy, with hot sauce and avocado on top.
