Vegan Quesadilla with Vegetable Filling
Ingredients
- 4 large tortillas
- 1/2 large onion
- 3 cloves garlic
- 1 bell pepper
- 2 cups chopped mushrooms
- 250g extra firm pressed tofu, crumbled
- 1 cup black beans
- 1 tbsp smoked paprika
- 3/4 tbsp cumin
- 1/2 tbsp chilli powder
- 1/2 tbsp onion powder
- 1/4 cup tomato sauce
- Salt & pepper to taste
- Vegan cheese sauce or vegan cheese of choice
Preparation
Start by sautéing your onions until translucent
Add in your peppers, mushrooms and garlic and cook for 5 minutes
Add in the rest of the ingredients then cook for a few more minutes until everything is combined and heated through
Assemble your quesadilla with some vegan cheese or the healthy vegan cheese sauce, add your filling, top with another tortilla and pan fry until golden on both sides
Serve with some cashew sour cream and dig in
