Cauliflower and Black Bean Tacos
Ingredients
- 6 tortillas (corn or wheat)
- guacamole
- pico de gallo
- red pickled onions (recipe on my feed)
- salsa of your choice
- coriander
Cauliflower
- 1 small cauliflower
- 2-3 garlic cloves
- 1 tsp oregano
- 2 tsp cumin
- 2 tsp coriander
- 1 tbsp chili powder (I used ancho chili powder)
- 1 tsp smoked paprika
- 3-4 tbsp olive oil
- salt & pepper
Black bean paste
- 1 can (250 g) black beans (+ cooking water)
- 1 small onion
- 2 garlic cloves
- 1 jalapeño (optional)
- 2 tbsp tomato paste
- 1 tsp cumin
- 1/2 tsp smoked paprika
- 1/4 tsp oregano
- salt & pepper
Preparation
Break cauliflower into florets, then toss in a bowl together with all the spices. Transfer to a preheated baking tray, then bake at 225°C for 35-40 minutes.
In the meantime, prepare the black bean paste. Sauté onion, garlic, and jalapeño, then add the beans together with the cooking water and cook until thickened. Mash.
Prepare the guacamole and other toppings.
When everything is ready, toast the tortillas in a hot pan until slightly charred, then wrap in a damp towel. Fill the tacos and enjoy.
Serve immediately and enjoy.
