Easy Crispy Black Bean Flautas
Ingredients
- 1 can low sodium black beans
- 8–10 corn tortillas
- 1/2 white onion, diced
- 1 jalapeño pepper, diced
- 1/2 tsp cumin
- 2 tbsp canola oil (optional)
- 1/2 tsp chili powder (optional)
- 1/2 tsp garlic powder
- 1/2–3/4 cup vegetable broth or water
- Salt and pepper to taste
Toppings
- Guacamole
- Cilantro
- Tapatio
- Salsa
Preparation
Sauté diced onion and jalapeño in oil until softened
Add black beans, cumin, chili powder, garlic powder, and vegetable broth or water, then cook until mixture thickens
Warm corn tortillas to make them pliable
Fill tortillas with the black bean mixture, roll them up tightly
Fry or bake the rolled flautas until crispy and golden brown
Serve with desired toppings
