Vegan Huevos Rancheros Breakfast

Ingredients

  • 4 corn tortillas
  • 1 can organic refried black beans
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2-3 slices vegan cheese
  • 4 vegan eggs
  • Salsa to taste
  • Cilantro to taste
  • 1 avocado
  • Salt and pepper to taste

Preparation

  1. Warm the tortillas on each side in a hot cast iron or non-stick pan.

  2. Spread a layer of beans that have been heated and mixed with salt, pepper, garlic and onion powder onto the tortillas.

  3. Add a layer of cheese.

  4. Top with the vegan eggs that have been pan-fried for about 4-5 minutes.

  5. Top with salsa, chopped cilantro and serve with avocado.
