Vegan Huevos Rancheros Breakfast
Ingredients
- 4 corn tortillas
- 1 can organic refried black beans
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 2-3 slices vegan cheese
- 4 vegan eggs
- Salsa to taste
- Cilantro to taste
- 1 avocado
- Salt and pepper to taste
Preparation
Warm the tortillas on each side in a hot cast iron or non-stick pan.
Spread a layer of beans that have been heated and mixed with salt, pepper, garlic and onion powder onto the tortillas.
Add a layer of cheese.
Top with the vegan eggs that have been pan-fried for about 4-5 minutes.
Top with salsa, chopped cilantro and serve with avocado.
