Homemade Vegan Refried Black Beans

Ingredients

  • 1 Cup cooked black beans
  • 1 Tbsp olive oil
  • 1/2 small onion (small dice)
  • 1/2 small red bell pepper (small dice)
  • 1 clove garlic (minced)
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/4 tsp cayenne
  • 1 Tbsp tomato paste
  • 2 tsp maple syrup
  • Salt and Pepper to taste

Preparation

  1. Heat a small pot over medium heat and add olive oil once warmed.

  2. Add diced onion, diced red bell pepper, and a teaspoon of salt; sauté for 4 to 5 minutes.

  3. Add minced garlic and continue sautéing for 1 more minute, stirring frequently to prevent burning.

  4. Add cumin, smoked paprika, cayenne, and tomato paste; stir to coat and sauté for 1 to 2 minutes.

  5. Add the cooked black beans and maple syrup to the pot.

  6. If the beans are not moist, add a couple of tablespoons of water or vegetable stock to deglaze the pot.

  7. Cover the pot, reduce heat to low, and simmer for at least 5 minutes.

  8. Uncover and mash the beans with a potato masher or fork to desired consistency.

Tips

  1. Mash the beans to anything from a paste to a lumpy mess, often leaving half whole for texture.
