Homemade Vegan Refried Black Beans
Ingredients
- 1 Cup cooked black beans
- 1 Tbsp olive oil
- 1/2 small onion (small dice)
- 1/2 small red bell pepper (small dice)
- 1 clove garlic (minced)
- 1 tsp cumin
- 1 tsp smoked paprika
- 1/4 tsp cayenne
- 1 Tbsp tomato paste
- 2 tsp maple syrup
- Salt and Pepper to taste
Preparation
Heat a small pot over medium heat and add olive oil once warmed.
Add diced onion, diced red bell pepper, and a teaspoon of salt; sauté for 4 to 5 minutes.
Add minced garlic and continue sautéing for 1 more minute, stirring frequently to prevent burning.
Add cumin, smoked paprika, cayenne, and tomato paste; stir to coat and sauté for 1 to 2 minutes.
Add the cooked black beans and maple syrup to the pot.
If the beans are not moist, add a couple of tablespoons of water or vegetable stock to deglaze the pot.
Cover the pot, reduce heat to low, and simmer for at least 5 minutes.
Uncover and mash the beans with a potato masher or fork to desired consistency.
Tips
Mash the beans to anything from a paste to a lumpy mess, often leaving half whole for texture.
