Vegan Chorizo Black Bean Soup
Ingredients
- 2 tsp extra virgin olive oil, divided
- 8 oz soy chorizo (also used seitan chorizo)
- 1 onion, diced
- 1 red bell pepper, diced
- 5 cloves garlic, minced
- 2 tsp cumin
- 3/4 tsp smoked paprika
- 4 cups vegetable broth
- 2 cans black beans, rinsed and drained
Optional toppings
- Green onions
- Cilantro
- Hemp seeds
Preparation
Heat olive oil in a soup pan over medium heat and sauté the chorizo until slightly browned, about 5-6 minutes.
Add the remaining 1 tsp olive oil, onions, and peppers, and cook until softened, about 5 minutes.
Add the garlic and spices and sauté for another minute until fragrant.
Add the broth and beans, bring to a boil, then reduce heat and simmer for 30 minutes.
Serve and top with desired toppings.
