Vegan Chorizo Black Bean Soup

Ingredients

  • 2 tsp extra virgin olive oil, divided
  • 8 oz soy chorizo (also used seitan chorizo)
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 5 cloves garlic, minced
  • 2 tsp cumin
  • 3/4 tsp smoked paprika
  • 4 cups vegetable broth
  • 2 cans black beans, rinsed and drained

Optional toppings

  • Green onions
  • Cilantro
  • Hemp seeds

Preparation

  1. Heat olive oil in a soup pan over medium heat and sauté the chorizo until slightly browned, about 5-6 minutes.

  2. Add the remaining 1 tsp olive oil, onions, and peppers, and cook until softened, about 5 minutes.

  3. Add the garlic and spices and sauté for another minute until fragrant.

  4. Add the broth and beans, bring to a boil, then reduce heat and simmer for 30 minutes.

  5. Serve and top with desired toppings.
