Homemade Vegan Tortilla Soup

Ingredients

  • 1 can of Jackfruit
  • 1 can of Corn Kernels
  • 1 can Black Beans
  • 2 cups cooked Quinoa
  • 1 Onion, diced
  • 4 Tomatoes, diced
  • 2 Garlic Cloves, minced
  • 4 Chipotle Chili Peppers in Adobo Sauce
  • 1 tbsp Avocado Oil
  • 4 cups Vegetable Broth
  • 1 tsp Cumin
  • Salt & Pepper to taste

Toppings

  • Avocado
  • Cilantro
  • Tortilla Chips
  • Chili Flakes

Preparation

  1. Put a large pot on medium-high heat and add avocado oil. Sauté garlic for 2 minutes.

  2. Add chipotle peppers in adobo sauce and sauté for an extra minute.

  3. Add vegetable broth and let simmer for 5 minutes.

  4. Add all other ingredients and simmer for 10-15 minutes.

  5. Serve in a bowl and add avocado, tortilla chips, cilantro and chili flakes.

Tips

  1. Use vegetables that are about to spoil to help reduce food waste.

  2. Make the soup flavorful by adding spices, seasonings, herbs, and chili peppers if desired.
