Vegan Green Vegetable Soup

Ingredients

  • 3 carrots chopped
  • 4 cloves of garlic minced
  • 1 jalapeño chopped
  • 1 bell pepper chopped
  • 1 sweet onion chopped
  • 4 cups of broccoli cut into bite size pieces
  • 2 cup of greens
  • 1, 15 oz can chickpeas drained and rinsed
  • 1 avocado pitted and chopped
  • 6 cups of vegetable broth or stock
  • 1/2 cup nutritional yeast
  • 2 teaspoon Trader Joe’s vegan chicken-less seasoning
  • 1 tsp paprika
  • 1 tsp cumin
  • red pepper flakes or salt and pepper to taste (don’t think you’ll need extra salt)
  • Garnish Italian parsley if desired

Preparation

  1. Heat large soup pot on medium heat. Dry sauté onion. Use a bit of the veg broth if needed.

  2. After 5 minutes, add garlic, carrots and jalapeño, bell pepper. Cook a couple of minutes, stirring frequently.

  3. Add broccoli, chickpeas and seasoning. Stir a couple minutes longer.

  4. Add veg broth, simmer for 8-10 minutes or until vegetables soften.

  5. About 1 minute from being done add avocado, greens and nutritional yeast. Stir.

  6. In batches, transfer soup to blender, blend until smooth. Check seasoning.

Notes

  1. This soup is great for meal prep and can be eaten throughout the week. It is healthy and packed with greens.
