White Bean Purée with Onion and Garlic

Ingredients

  • 1/2 cup dry white beans soaked
  • 2 tbsp olive oil
  • 1/4 yellow onion small dice
  • 2 cloves garlic minced
  • 3/4-1 cup veggie broth
  • 1/2 tsp salt
  • Cracked pepper

Preparation

  1. Soak beans for 4 hours, rinse and cook in a small pot with water for 30 minutes or until beans are cooked through but still al dente.

  2. Drain, rinse with water and set aside.

  3. In the same pot add olive oil over medium high heat.

  4. Add in onion and cook until translucent.

  5. Add in garlic and cook until fragrant.

  6. Add beans and 3/4 cup veggie broth.

  7. Cook until liquid is reduced by half.

  8. Season with salt and pepper.

  9. Transfer to high speed blender and blend on high adding in extra broth if purée is too thick.

  10. Check for seasoning and serve.

Tips

  1. This would be a beautiful purée to add to any plate and would make a wonderful dip for crudités as well.
