Vegan Savory Broccoli Fritters
Ingredients
- 600g broccoli
- 2 shallots
- 2 cloves garlic
- 100g vegan cheese
- 2 tablespoons vegan parmesan
- 2 egg substitutes (powder)
- 50g chickpea flour
- 200g vegan natural yoghurt
- 5 tbsp olive oil
- salt
- pepper
Preparation
Coarsely grate the broccoli, chop the shallots and the garlic.
Mix the cheese, parmesan, egg substitute, yoghurt and flour, then fold in the broccoli, shallots and garlic and season with salt and pepper.
Shape the broccoli fritters and flatten them slightly.
Heat the oil in a non-stick pan and fry the fritters, then drain on kitchen paper.
