Vegan Lentil and Vegetable Pasta
Ingredients
- 1 box pasta
- 1 tbsp olive oil
- 1/2 onion diced
- 1 zucchini diced
- 2 cups cooked brown lentils
- 1 tbsp fresh minced garlic
- 1 jar marinara sauce
- 1/4 cup red wine
- violife Parmesan
Preparation
Cook the pasta according to package instructions.
Sauté onion, zucchini and garlic together in olive oil until cooked.
Add the wine to deglaze the pan, cooked lentils and marinara sauce.
Simmer for 15 minutes.
Serve over pasta.
