Spaghetti with Peppers and Artichokes

Ingredients

  • 1/2 lb. pasta (used spaghetti)
  • 2 tbsp olive oil
  • 1 tsp kosher salt
  • 1/4 tsp pepper
  • 2/3 cup finely chopped onion
  • 1/2 cup vegetable broth
  • 1 pint cherry or grape tomatoes sliced
  • 1.5 cups marinara sauce
  • 1/2 tsp garlic powder
  • 3/4 cups jarred marinated artichokes drained, chopped
  • 1/2 cup roasted peppers chopped

Preparation

  1. Cook pasta until al dente in salted water and drain, then set aside.

  2. In a large pan, add oil, onion, salt, and pepper.

  3. Cook until onion is translucent, stirring often.

  4. Add broth and tomatoes, then cook for 5 minutes.

  5. Add remaining ingredients and cook for another 5 minutes.

  6. Add pasta and stir.

  7. Serve with fresh or dried parsley.
