Vegan Baked Spaghetti with Kale and Tomatoes

Ingredients

  • 16 oz angel hair pasta
  • 2 cups baby kale
  • 1/2 cup chopped sun-dried tomatoes
  • 1/2 cup diced onion
  • 1 cup diced zucchini
  • 2 1/4 cups marinara sauce
  • 2.5 cups water
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 1/2 tsp black pepper
  • 1/2 tsp dried basil
  • 1 tbsp olive oil optional
  • fresh basil garnish

Preparation

  1. Preheat the oven to 375°F.

  2. In a large baking dish, combine the angel hair pasta, baby kale, chopped sun-dried tomatoes, diced onion, diced zucchini, marinara sauce, water, salt, garlic powder, black pepper, dried basil, and olive oil if using.

  3. Stir well to ensure all ingredients are evenly distributed.

  4. Cover the dish with aluminum foil and bake for 30-40 minutes, or until the pasta is tender and the mixture is bubbly.

  5. Remove the foil, garnish with fresh basil, and serve immediately.
