Spaghetti with Zucchini and Tomatoes
Ingredients
- 1/2 lb Spaghetti or other long Pasta
- 4 cloves of Garlic sliced thin
- 1/2 small Onion chopped
- 1 medium Zucchini cut in half and sliced
- 15 oz can of chopped Tomatoes
- 1 cup chopped fresh Tomatoes
- 1 1/2 Tbsp of Grape Seed Oil
- Pinch of Red Chili Flakes
- 2 Tbsp Basil chopped
- Salt & Pepper to taste
- Vegan Parm for serving
Preparation
Cook the spaghetti according to package directions.
In a large skillet on medium heat, saute the onion and chili flakes until onions become translucent.
Add in the zucchini and garlic and continue to cook for 6-8 minutes or until the zucchini become tender.
Add in the tomatoes and let simmer until pasta is ready.
Add in lightly drained pasta and chopped basil and mix well.
Cook for a few minutes to heat through. Serve with vegan parmesan.
Notes
Sometimes you just need a big ol plate of spaghetti! This is a perfect balance of pasta and veggies made with simple ingredients and tons of flavor.
