15-Minute Vegan Bolognese
Ingredients
- 1 medium onion, finely diced
- 2 medium carrots, finely diced
- 2 cloves garlic, finely diced
- 1 teaspoon dried oregano
- one handful fresh basil
- pinch of pepper
- pinch of salt
- 500g tomato puree
- 125g dry minced soy
- oil (for sautéing)
Preparation
Optionally, cook the minced soy in vegetable broth for 10 minutes.
Heat oil in a pan, add onion, garlic, carrots, and minced soy, then sauté for 4-5 minutes.
Add tomato puree and seasoning, then let it simmer for 10 minutes.
In the meantime, cook pasta according to package instructions.
Serve with fresh basil.
