15-Minute Vegan Bolognese

Ingredients

  • 1 medium onion, finely diced
  • 2 medium carrots, finely diced
  • 2 cloves garlic, finely diced
  • 1 teaspoon dried oregano
  • one handful fresh basil
  • pinch of pepper
  • pinch of salt
  • 500g tomato puree
  • 125g dry minced soy
  • oil (for sautéing)

Preparation

  1. Optionally, cook the minced soy in vegetable broth for 10 minutes.

  2. Heat oil in a pan, add onion, garlic, carrots, and minced soy, then sauté for 4-5 minutes.

  3. Add tomato puree and seasoning, then let it simmer for 10 minutes.

  4. In the meantime, cook pasta according to package instructions.

  5. Serve with fresh basil.
