Easy 30-Minute Vegan Bolognese

Ingredients

  • 1 big onion
  • 3 cloves of garlic
  • 200g brown mushrooms
  • 240g cooked lentils (1 can)
  • 2 teaspoons paprika
  • 2 teaspoons cumin
  • 1/2 teaspoon chilli (can be omitted)
  • 70g tomato puree (2 tablespoons)
  • 400 ml chopped tomatoes (2 cans)
  • 1/2 cup red wine (vegan)
  • 1 vegetable broth
  • 1/2 cup water
  • Salt and black pepper

For serving

  • Spaghetti
  • Fresh thyme

Preparation

  1. Finely chop onion and garlic and cook in some oil on a pan until soft.

  2. Add chopped mushrooms and precooked lentils.

  3. Add the paprika, cumin and chili and cook for a few minutes.

  4. Add tomatoes, tomato puree, red wine, vegetable broth and water.

  5. Let it cook for 10-12 minutes.

  6. Taste and add black pepper and salt if needed.

  7. Cook the spaghetti and serve with the bolognese and fresh thyme.
