Easy 30-Minute Vegan Bolognese
Ingredients
- 1 big onion
- 3 cloves of garlic
- 200g brown mushrooms
- 240g cooked lentils (1 can)
- 2 teaspoons paprika
- 2 teaspoons cumin
- 1/2 teaspoon chilli (can be omitted)
- 70g tomato puree (2 tablespoons)
- 400 ml chopped tomatoes (2 cans)
- 1/2 cup red wine (vegan)
- 1 vegetable broth
- 1/2 cup water
- Salt and black pepper
For serving
- Spaghetti
- Fresh thyme
Preparation
Finely chop onion and garlic and cook in some oil on a pan until soft.
Add chopped mushrooms and precooked lentils.
Add the paprika, cumin and chili and cook for a few minutes.
Add tomatoes, tomato puree, red wine, vegetable broth and water.
Let it cook for 10-12 minutes.
Taste and add black pepper and salt if needed.
Cook the spaghetti and serve with the bolognese and fresh thyme.
