30-Minute Vegan Taco Bowl

Ingredients

  • 1/2 cauliflower
  • 240g cooked lentils (1 can)
  • 200g brown mushrooms
  • 2 cloves garlic
  • 1 onion
  • 2 teaspoons cumin
  • 3 teaspoons paprika
  • 1 teaspoon chili flakes
  • 3 tablespoons spicy salsa
  • Salt and pepper

Preparation

  1. Wash and finely chop the cauliflower, mushrooms, garlic, and onions.

  2. Cook garlic and mushrooms in a pan with some oil over medium heat.

  3. Add the spices.

  4. Add the mushrooms and cauliflower.

  5. Drain the lentils and add them too.

  6. Cook for 10-15 minutes until browned.

  7. Taste and season with salsa, salt, and pepper.

  8. Serve in bowls with salad, nacho chips, salsa, corn, black beans, and lime.
