30-Minute Vegan Taco Bowl
Ingredients
- 1/2 cauliflower
- 240g cooked lentils (1 can)
- 200g brown mushrooms
- 2 cloves garlic
- 1 onion
- 2 teaspoons cumin
- 3 teaspoons paprika
- 1 teaspoon chili flakes
- 3 tablespoons spicy salsa
- Salt and pepper
Preparation
Wash and finely chop the cauliflower, mushrooms, garlic, and onions.
Cook garlic and mushrooms in a pan with some oil over medium heat.
Add the spices.
Add the mushrooms and cauliflower.
Drain the lentils and add them too.
Cook for 10-15 minutes until browned.
Taste and season with salsa, salt, and pepper.
Serve in bowls with salad, nacho chips, salsa, corn, black beans, and lime.
