Vegan Cauliflower Alfredo with Mushrooms and Kale

Ingredients

  • pasta
  • 5-7 sliced mushrooms
  • 2 chopped stems of kale
  • 1 tablespoon olive oil
  • 1/2 tablespoon tamari (optional)
  • salt to taste
  • 1/2 cup water

Sauce

  • 2 cups cauliflower florets
  • 3 garlic cloves
  • 1/4 chopped red onion
  • 1/2 cup + 2 tablespoons oat milk
  • 1 tablespoon white miso
  • 3 tablespoons nutritional yeast
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon red chili flakes
  • 1/2 teaspoon black pepper
  • 1/3 cup reserved pasta water

Preparation

  1. Cook pasta al dente and reserve 1/3 cup of pasta water.

  2. Cook the cauliflower with 1 tablespoon olive oil, minced garlic, chopped red onion, salt, and 1/2 cup water for 12-15 minutes until soft.

  3. Blend the cooked cauliflower, onion, and garlic with the remaining sauce ingredients and add pasta water to achieve the desired texture.

  4. For serving, sauté mushrooms and kale with 1/2 tablespoon of tamari if desired, then pour the sauce over the vegetables and stir for a minute.

  5. Stir in the cooked pasta and heat through.
