Vegan Roasted Tomato Pasta

Ingredients

  • 4 cups cherry tomatoes about 2 pints
  • 4 tablespoons olive oil
  • 8 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 8 ounces pasta of choice
  • 1/4 cup chopped fresh basil
  • 2 tablespoons fresh lemon juice

Preparation

  1. Preheat oven to 400 degrees F.

  2. Slice the cherry tomatoes in half and place them in an oven-safe baking dish.

  3. Pour the olive oil over the tomatoes, then add the minced garlic, salt, oregano, and thyme.

  4. Stir everything in the pan to combine.

  5. Place the dish in the oven and roast for about 30 minutes, until the tomatoes are collapsing and slightly charred.

  6. While the tomatoes are roasting, cook the pasta according to package instructions.

  7. Once the tomatoes are done, remove the dish from the oven.

  8. Add the cooked pasta, chopped fresh basil, and fresh lemon juice to the dish.

  9. Toss everything to combine.

Tips

  1. Serve with some grated parmesan such as Violife for a vegan option and more basil.
