Creamy Tomato Mushroom Pasta

Ingredients

  • 125g pasta of choice
  • 1/2 onion, chopped
  • 150g mushrooms
  • 2 tbsp tomato purée
  • 1 tbsp tamari
  • 1/2 tbsp maple syrup
  • 1/4 can coconut milk
  • Black pepper to taste
  • Large handful kale

Preparation

  1. Cook the pasta according to packaging instructions.

  2. Meanwhile, add the onion and the mushrooms to a non-stick frying pan and cook for around 5 minutes, until the mushrooms soften.

  3. Add the tomato purée, tamari, maple syrup, coconut milk, and season to taste with black pepper.

  4. Continue stirring for a further five minutes until the sauce thickens.

  5. At the last minute, stir in the cooked pasta together with the kale.
