Creamy Tomato Mushroom Pasta
Ingredients
- 125g pasta of choice
- 1/2 onion, chopped
- 150g mushrooms
- 2 tbsp tomato purée
- 1 tbsp tamari
- 1/2 tbsp maple syrup
- 1/4 can coconut milk
- Black pepper to taste
- Large handful kale
Preparation
Cook the pasta according to packaging instructions.
Meanwhile, add the onion and the mushrooms to a non-stick frying pan and cook for around 5 minutes, until the mushrooms soften.
Add the tomato purée, tamari, maple syrup, coconut milk, and season to taste with black pepper.
Continue stirring for a further five minutes until the sauce thickens.
At the last minute, stir in the cooked pasta together with the kale.
