Vegan Coconut Cauliflower Pasta

Ingredients

  • 10 oz pasta of choice
  • 2 cups cauliflower florets
  • 1 cup coconut milk
  • 3 tbsp nutritional yeast
  • Juice of 1/2 lemon
  • 1/2 tsp salt

Preparation

  1. Cook the cauliflower for around 12-15 minutes, until tender.

  2. Meanwhile, in a different pan cook the pasta according to packaging instructions.

  3. When the cauliflower is cooked, drain and rinse it and transfer it to a blender together with the coconut milk, nutritional yeast, lemon juice and salt.

  4. Blend until smooth, then mix together with drained pasta and serve.
