Creamy Vegan Blush Alfredo Pasta

Ingredients

  • 1/3 cup sun-dried tomatoes in oil
  • 1/2 cup cashews *
  • 7 oz. extra firm tofu
  • 2 tbsp nutritional yeast
  • 3 garlic cloves
  • Juice of 1 lemon
  • 2 cups pasta water
  • Salt to taste

Additional

  • 16 oz pasta of choice
  • A few handful of baby spinach
  • Fresh basil

Preparation

  1. Prepare pasta according to package directions and reserve 2 cups of pasta water before draining.

  2. Add all ingredients for the sauce to your blender and mix until smooth, starting with 1 cup of pasta water and adding more as needed.

  3. Sauté spinach until wilted, using a splash of the pasta water if desired.

  4. Toss the sautéed spinach with the hot pasta and blush Alfredo sauce, then top with fresh basil and enjoy.

Tips

  1. Soak cashews in hot water for 15 minutes for easier blending; omit this step if using a high-power blender.

  2. This recipe makes 4 servings.
