Avocado Chickpea Mash Spread

Ingredients

  • 1 can chickpeas, rinsed and drained
  • 1 ripe avocado, pit removed
  • 1 lemon
  • 2 spring onions, minced
  • 1 tablespoon capers or minced green olives
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Preparation

  1. Add the chickpeas, avocado, and capers to a bowl and mash with a fork or potato masher until a mash forms, leaving some chickpea pieces for texture.

  2. Grate the zest from the lemon into the mash.

  3. Cut the lemon in half and squeeze the juice over the mash.

  4. Add the minced spring onions and garlic powder, then stir to combine.

  5. Season with salt and pepper to taste.

  6. Spread the mixture over your chosen base, such as a bagel.

Tips

  1. Optionally, add fresh basil or other toppings as desired.

  2. To prepare sautéed mushrooms, cook sliced mushrooms in a pan with a pinch of salt until the water evaporates.

  3. Add a splash of soy sauce, a pinch of smoked paprika and garlic powder, a splash of vegetable broth to deglaze the pan, and a touch of maple syrup.

  4. Cook until the liquid is fully absorbed, then use as a topping.
