Vegan Lentil Sloppy Fries

Ingredients

  • 1 cup dried French green lentils, rinsed
  • 1 tablespoon non-dairy butter
  • 1 tablespoon neutral oil
  • 1 medium red bell pepper, minced
  • 1 medium yellow onion, minced
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1/4 cup ketchup
  • 8 ounces tomato sauce
  • 1/2 to 1 cup water
  • 1 tablespoon organic brown sugar
  • 2 teaspoons chili powder
  • 2 teaspoons Worcestershire sauce
  • 1/4 teaspoon red pepper flakes
  • Kosher salt and pepper to taste

Preparation

  1. Cook lentils like pasta in lots of salted water, bring to a boil, and simmer until tender, 20-30 minutes, then drain and set aside

  2. On the stovetop over medium heat in a large Dutch oven or pot, melt butter and heat oil; when hot, add pepper and onion, and cook 3-5 minutes until soft

  3. Add garlic and tomato paste, cook stirring until paste caramelizes and turns a deep red, 2-3 minutes, then mix in lentils to coat

  4. Add the remaining ingredients and 1/2 to 1 cup water, scrape up any brown bits from the bottom of the pot, bring to a boil, then simmer 15-20 minutes for flavors to meld and sauce to thicken

Serving suggestions

  1. Devour on a bun with favorite toppings or load it on nachos, potatoes, or fries
