Vegan Lentil Sloppy Fries
Ingredients
- 1 cup dried French green lentils, rinsed
- 1 tablespoon non-dairy butter
- 1 tablespoon neutral oil
- 1 medium red bell pepper, minced
- 1 medium yellow onion, minced
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1/4 cup ketchup
- 8 ounces tomato sauce
- 1/2 to 1 cup water
- 1 tablespoon organic brown sugar
- 2 teaspoons chili powder
- 2 teaspoons Worcestershire sauce
- 1/4 teaspoon red pepper flakes
- Kosher salt and pepper to taste
Preparation
Cook lentils like pasta in lots of salted water, bring to a boil, and simmer until tender, 20-30 minutes, then drain and set aside
On the stovetop over medium heat in a large Dutch oven or pot, melt butter and heat oil; when hot, add pepper and onion, and cook 3-5 minutes until soft
Add garlic and tomato paste, cook stirring until paste caramelizes and turns a deep red, 2-3 minutes, then mix in lentils to coat
Add the remaining ingredients and 1/2 to 1 cup water, scrape up any brown bits from the bottom of the pot, bring to a boil, then simmer 15-20 minutes for flavors to meld and sauce to thicken

Devour on a bun with favorite toppings or load it on nachos, potatoes, or fries
