Vegan Lentil Sloppy Fries
Ingredients
- 1 cup dried French green lentils, rinsed
- 1 tablespoon non-dairy butter
- 1 tablespoon neutral oil
- 1 medium red bell pepper, minced
- 1 medium yellow onion, minced
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1/4 cup ketchup
- 8 ounces tomato sauce
- 1/2 to 1 cup water
- 1 tablespoon organic brown sugar
- 2 teaspoons chili powder
- Worcestershire sauce
- 1/4 teaspoon red pepper flakes
- Kosher salt and pepper to taste
Preparation
Cook the lentils like pasta in salted water, bring to a boil, and simmer until tender, about 20-30 minutes; drain and set aside.
In a large Dutch oven or pot over medium heat, melt the butter and heat the oil; when hot, add the pepper and onion and cook for 3-5 minutes until soft.
Add the garlic and tomato paste, cook stirring until the paste caramelizes and turns a deep red, about 2-3 minutes; mix in the lentils to coat.
Add the remaining ingredients and 1/2 to 1 cup water, scrape up any brown bits from the bottom of the pot, bring to a boil, then simmer for 15-20 minutes for flavors to meld and sauce to thicken.

Serve on a bun with your favorite toppings or load onto nachos, potatoes, or fries.
