Vegan Lentil Sloppy Fries

Ingredients

  • 1 cup dried French green lentils, rinsed
  • 1 tablespoon non-dairy butter
  • 1 tablespoon neutral oil
  • 1 medium red bell pepper, minced
  • 1 medium yellow onion, minced
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1/4 cup ketchup
  • 8 ounces tomato sauce
  • 1/2 to 1 cup water
  • 1 tablespoon organic brown sugar
  • 2 teaspoons chili powder
  • Worcestershire sauce
  • 1/4 teaspoon red pepper flakes
  • Kosher salt and pepper to taste

Preparation

  1. Cook the lentils like pasta in salted water, bring to a boil, and simmer until tender, about 20-30 minutes; drain and set aside.

  2. In a large Dutch oven or pot over medium heat, melt the butter and heat the oil; when hot, add the pepper and onion and cook for 3-5 minutes until soft.

  3. Add the garlic and tomato paste, cook stirring until the paste caramelizes and turns a deep red, about 2-3 minutes; mix in the lentils to coat.

  4. Add the remaining ingredients and 1/2 to 1 cup water, scrape up any brown bits from the bottom of the pot, bring to a boil, then simmer for 15-20 minutes for flavors to meld and sauce to thicken.
