Homemade Baked Vegan Lentil Rolls

Ingredients

Dough

  • 3 cups of flour
  • 1 cup of water
  • 1/2 tsp of baking powder
  • 1/2 tsp of salt
  • 1/4 cup of olive oil

Filling

  • 300g of cooked lentils
  • 2 tbsp of olive oil
  • 1/2 of an onion
  • 2 cloves of garlic
  • 1/4 cup of ajvar (or red pepper paste or tomato paste)
  • 1/2 cup of tomato sauce
  • 1 tsp of cumin
  • 1 tsp of oregano
  • Salt and pepper to taste
  • Optionally 1/3 tsp of chili flakes
  • 1 tbsp of parsley

Preparation

  1. Mix together all of the ingredients for the dough and keep adding water little by little until you knead the dough.

  2. For the filling add all of the ingredients to a pan, stir fry it for 5 minutes and let cool.

  3. Roll out the dough in a thin rectangle shape and spread lentils on top. Roll into a log like for cinnamon rolls and cut the rolls.

  4. Drizzle with some olive oil on top and bake at 190°C for about 25-30 minutes. Serve warm.

Tips

  1. When starting kneading just get all the ingredients together in a ball and then wait for 5-10 minutes for the gluten to develop and continue kneading. It’s going to be much smoother.
