Homemade Vegan Pizza with Cauliflower Cheese

Ingredients

Dough

  • 3 cups flour (360g)
  • 1 packet of yeast
  • 1 tbsp sugar
  • 1 1/2 tbsp olive oil
  • 1 cup warm water
  • 1/2 tsp salt

Vegan cheese

  • 1/2 cauliflower (375g)
  • 3.5 tbsp tapioca flour
  • 1 tbsp nutritional yeast
  • 1-2 tsp salt
  • 1/2-1 cup non-dairy milk, unsweetened and no flavor

Pizza sauce

  • 3/4 cup tomato sauce
  • 1/4 tsp garlic powder
  • 1/4 tsp parsley
  • 1/4 tsp oregano
  • A pinch red pepper flakes

Preparation

  1. Warm the water to 110-115°F (43-46°C).

  2. Pour sugar and yeast into the warm water and let it sit for 10 minutes until foamy.

  3. Sift half the flour and salt into a large bowl.

  4. Add olive oil and the yeast mixture, then gently mix while adding the remaining flour until the dough is somewhat sticky.

  5. Knead the dough on a floured surface for about a minute until smooth and soft, adding more flour or water if needed.

  6. Form the dough into a ball, place in an oiled bowl, cover with a dish towel, and let rise for at least 30 minutes or until doubled in size.

  7. While the dough rises, cut cauliflower into small chunks and boil until fork tender.

  8. Drain the cauliflower and blend it with tapioca flour, nutritional yeast, salt, and non-dairy milk until smooth, starting with 1/2 cup milk and adding more as needed.

  9. Mix tomato sauce, garlic powder, parsley, oregano, and red pepper flakes to make the pizza sauce.

  10. Roll out the risen dough on a floured surface.

  11. Spread the pizza sauce over the dough.

  12. Spread the vegan cheese over the sauce.

  13. Bake in a preheated oven at 450-500°F for 10-15 minutes or until the crust is golden and cheese is bubbly.
