Homemade Vegan Pizza with Cauliflower Cheese Topping

Ingredients

Dough

  • 3 cups (360 g) all-purpose flour
  • 1 packet (7 g) active dry yeast
  • 1 tablespoon sugar
  • 1 1/2 tablespoons olive oil
  • 1 cup warm water
  • 1/2 teaspoon salt

Vegan cheese

  • 1/2 head cauliflower (375 g)
  • 3.5 tablespoons tapioca flour
  • 1 tablespoon nutritional yeast
  • 1 to 2 teaspoons salt, to taste
  • 1/2 to 1 cup unsweetened plain non-dairy milk

Pizza sauce

  • 3/4 cup tomato sauce
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon dried parsley
  • 1/4 teaspoon dried oregano
  • Pinch red pepper flakes

Preparation

  1. Warm the water to 110-115°F (43-46°C)

  2. Pour the sugar and yeast into the warm water and let sit for 10 minutes, until foamy

  3. Sift half of the flour and the salt into a large bowl

  4. Add the olive oil and activated yeast mixture, then gently mix while gradually adding the remaining flour until a sticky dough forms

  5. Knead the dough on a floured surface for about 1 minute, adding small amounts of flour if too sticky or water if too dry, until smooth and soft

  6. Shape the dough into a ball, place in a lightly oiled bowl, cover with a dish towel, and let rise for at least 30 minutes or until doubled in size

  7. While the dough rises, cut the cauliflower into small chunks and boil until fork-tender

  8. Drain the cauliflower, then combine with remaining vegan cheese ingredients in a high-speed blender, starting with 1/2 cup non-dairy milk and adding more as needed until smooth

  9. Preheat the oven to 425°F (220°C)

  10. Roll out the dough on a floured surface to fit a pizza pan

  11. Spread the pizza sauce evenly over the dough, leaving a 1-inch border

  12. Spread the vegan cheese over the sauce

  13. Bake for 15-20 minutes or until the crust is golden and the cheese is melted and bubbly
