Homemade Vegan Pizza with Cauliflower Cheese Topping
Ingredients
Dough
- 3 cups (360 g) all-purpose flour
- 1 packet (7 g) active dry yeast
- 1 tablespoon sugar
- 1 1/2 tablespoons olive oil
- 1 cup warm water
- 1/2 teaspoon salt
Vegan cheese
- 1/2 head cauliflower (375 g)
- 3.5 tablespoons tapioca flour
- 1 tablespoon nutritional yeast
- 1 to 2 teaspoons salt, to taste
- 1/2 to 1 cup unsweetened plain non-dairy milk
Pizza sauce
- 3/4 cup tomato sauce
- 1/4 teaspoon garlic powder
- 1/4 teaspoon dried parsley
- 1/4 teaspoon dried oregano
- Pinch red pepper flakes
Preparation
Warm the water to 110-115°F (43-46°C)
Pour the sugar and yeast into the warm water and let sit for 10 minutes, until foamy
Sift half of the flour and the salt into a large bowl
Add the olive oil and activated yeast mixture, then gently mix while gradually adding the remaining flour until a sticky dough forms
Knead the dough on a floured surface for about 1 minute, adding small amounts of flour if too sticky or water if too dry, until smooth and soft
Shape the dough into a ball, place in a lightly oiled bowl, cover with a dish towel, and let rise for at least 30 minutes or until doubled in size
While the dough rises, cut the cauliflower into small chunks and boil until fork-tender
Drain the cauliflower, then combine with remaining vegan cheese ingredients in a high-speed blender, starting with 1/2 cup non-dairy milk and adding more as needed until smooth
Preheat the oven to 425°F (220°C)
Roll out the dough on a floured surface to fit a pizza pan
Spread the pizza sauce evenly over the dough, leaving a 1-inch border
Spread the vegan cheese over the sauce
Bake for 15-20 minutes or until the crust is golden and the cheese is melted and bubbly
