Delicious Homemade Vegan Pizza with Cauliflower Cheese

Ingredients

Dough

  • 3 cups flour (360g)
  • 1 packet of yeast
  • 1 tbsp sugar
  • 1 1/2 tbsp olive oil
  • 1 cup warm water
  • 1/2 tsp salt

Vegan cheese

  • 1/2 cauliflower (375g)
  • 3.5 tbsp tapioca flour
  • 1 tbsp nutritional yeast
  • 1-2 tsp salt
  • 1/2-1 cup unsweetened non-dairy milk

Pizza sauce

  • 3/4 cup tomato sauce
  • 1/4 tsp garlic powder
  • 1/4 tsp parsley
  • 1/4 oregano
  • A pinch red pepper flakes

Preparation

  1. Warm water to 110-115°F (43-46°C)

  2. Mix sugar and yeast packet into warm water and let stand for 10 minutes until foamy

  3. Sift half of the flour and salt into a large bowl

  4. Add olive oil and activated yeast mixture, then gradually add the remaining flour while mixing until a sticky dough forms

  5. Knead dough on a floured surface for about 1 minute, adding a little extra flour if too sticky or water if too dry, until smooth and soft

  6. Shape dough into a ball, place in an oiled bowl, cover with a dish towel, and let rise for at least 30 minutes or until doubled

  7. Preheat oven to 450°F (230°C)

  8. While dough rises, cut cauliflower into small chunks and boil until fork-tender

  9. Drain cauliflower and blend with remaining cheese ingredients, starting with 1/2 cup non-dairy milk and adding more as needed until smooth

  10. Mix pizza sauce ingredients in a small bowl

  11. Roll out the risen dough on a floured surface and transfer to a pizza pan

  12. Spread pizza sauce evenly over the dough

  13. Spread the vegan cheese over the sauce

  14. Bake for 12-15 minutes until the crust is golden and the cheese is bubbly

Tips

  1. Microwave water for about 30 seconds to warm, or test with finger for the temperature of a very hot bath

  2. Add flour gradually as needed; the amount may vary by day

  3. Add salt to taste when preparing the vegan cheese

  4. Use as little non-dairy milk as possible when blending the cheese for a better texture
