Spicy Pulled Jackfruit Pork
Ingredients
- Jackfruit (drained and rinsed)
- 1 yellow onion, diced
- 2 large cloves garlic, minced
- 1/8 teaspoon ground cloves
- 1/8 teaspoon ground cinnamon
- 1/2 teaspoon chili flakes
- 1/4 teaspoon cayenne pepper
- 1 teaspoon smoked paprika
- 1/2 tablespoon ground cumin
- 1 teaspoon chili powder
- 1/4 cup tamari
- 3 tablespoons maple syrup
- 1/4 cup tomato paste
- 1 cup vegetable stock
- 1 teaspoon liquid smoke
- Cracked black pepper
- 1 teaspoon sea salt
Preparation
Drain and rinse the jackfruit.
Remove the hard core and pull the jackfruit apart with your hands.
Sauté the onion and garlic.
In a small bowl, combine all dry spices and add them to the onion and garlic mixture.
Add the jackfruit and toss to combine.
In another small bowl, combine the tomato paste, tamari, liquid smoke, and maple syrup; whisk to combine and add to the pan.
Stir the mixture.
Add the vegetable stock, salt, and pepper; mix thoroughly.
Cover the pan and reduce heat to medium-low; cook for approximately 30-40 minutes.
Taste and adjust seasoning as needed.
Serve with pasta, tacos, or other dishes as desired.
Tips
This ragu pairs well with vegetables like asparagus, spinach, and black olives for added variety.
