Vegan Spicy Pulled Jackfruit Pork

Ingredients

  • Jackfruit
  • 1 yellow onion diced
  • 2 large cloves garlic minced
  • 1/8 tsp cloves
  • 1/8 tsp cinnamon
  • 1/2 tsp chilli flakes
  • 1/4 tsp cayenne
  • 1 tsp smoked paprika
  • 1/2 tbsp cumin
  • 1 tsp chilli powder
  • 1/4 cup tamari
  • 3 tbsp maple syrup
  • 1/4 cup tomato paste
  • 1 cup veggie stock
  • 1 tsp liquid smoke
  • Cracked black pepper
  • 1 tsp sea salt

Preparation

  1. Drain and rinse jackfruit.

  2. Remove hard core and pull jackfruit apart with your hands.

  3. Sauté onion and garlic.

  4. In a small bowl, combine all dry spices and toss them in with the onion and garlic.

  5. Add jackfruit and toss to combine.

  6. In a small bowl, combine tomato paste, tamari, liquid smoke, and maple syrup. Whisk to combine and add to the pan.

  7. Stir.

  8. Add in stock, salt, and pepper, and mix thoroughly.

  9. Cover and reduce heat to medium low for approximately 30-40 minutes.

  10. Taste for seasoning.

  11. Add to pasta, tacos, or whatever else you fancy.

Notes

  1. This ragu can be packed with asparagus, spinach, black olives, and vegan cheese for added flavor.
