Spicy Pulled Jackfruit Pork
Ingredients
- Jackfruit
- 1 yellow onion diced
- 2 large cloves garlic minced
- 1/8 tsp cloves
- 1/8 tsp cinnamon
- 1/2 tsp chilli flakes
- 1/4 tsp cayenne
- 1 tsp smoked paprika
- 1/2 tbsp cumin
- 1 tsp chilli powder
- 1/4 cup tamari
- 3 tbsp maple syrup
- 1/4 cup tomato paste
- 1 cup veggie stock
- 1 tsp liquid smoke
- Cracked black pepper
- 1 tsp sea salt
Preparation
Drain and rinse the jackfruit.
Remove the hard core and pull the jackfruit apart with your hands.
Sauté the onion and garlic.
In a small bowl, combine all the dry spices and add them to the onion and garlic mixture.
Add the jackfruit and toss to combine.
In another small bowl, combine the tomato paste, tamari, liquid smoke, and maple syrup, then whisk to combine and add to the pan.
Stir well.
Add the vegetable stock, salt, and pepper, and mix thoroughly.
Cover the pan and reduce heat to medium-low for approximately 30-40 minutes.
Taste for seasoning.
Add the mixture to pasta, tacos, or other dishes as desired.
Tips
This pulled jackfruit can be used to make a ragu packed with asparagus, spinach, black olives, and vegan cheese.
