Baked Vegan Lentil Meatballs

Ingredients

  • 2 tbsp olive oil
  • Pinch chili flakes
  • 3 cloves garlic, minced
  • 1/2 chopped onion, diced
  • 2tbsp tomato paste
  • 1 1/2 c cooked green lentils
  • 1 1/2 c sliced cremini mushrooms
  • 1/4c vegan parm
  • 1/3-1/2c gf panko
  • 1 1/2tbsp Italian seasoning
  • 1/2 c fresh cilantro
  • 1tsp salt
  • Cracked pepper
  • 1/2tsp dried chilies

Preparation

  1. Sauté onion, garlic, pinch chili flakes.

  2. Add in shrooms and sauté until they soften.

  3. Add mushroom mix to food processor with remaining ingredients.

  4. Pulse until mixture comes together.

  5. Transfer to a bowl and place in fridge to firm up for about 30 minutes.

  6. Preheat oven to 400F.

  7. Line a sheet with parchment.

  8. Roll balls about 1 1/2-2 inches in size and place on sheet.

  9. Bake for 20 minutes, turn and bake again for 10 minutes.

  10. Balls should be firm and crisp on the outside and still tender and juicy on the inside.

Serving suggestions

  1. Serve with your favorite pasta, veggies and tomato sauce.
