Easy Vegan Lentil Meatballs
Ingredients
- 1 flax egg
- 2 tablespoons olive oil
- 1/2 teaspoon chili flakes
- 1/2 yellow onion
- 3 cloves garlic
- 1 1/2 cups cooked lentils
- 1/4 cup vegan Parmesan
- 2 tablespoons coconut flour
- 1/4 cup chopped cilantro
- 1 tablespoon tomato paste
- 1 teaspoon salt
- Cracked pepper
Preparation
Preheat oven to 375 degrees Fahrenheit
Sauté onion, chili flakes, and garlic until fragrant and onion is soft
Throw everything into a food processor and pulse until just combined
If the mixture is too wet, add 1 more tablespoon of coconut flour
Form into balls and place in the fridge for 30 minutes
Sauté the balls on the stovetop until browned on all sides and transfer to a parchment-lined cookie sheet
Place in the preheated oven for 20 minutes
Tips
This recipe yields about 10 meatballs, adjust flour if mixture consistency varies
