Easy Vegan Lentil Meatballs

Ingredients

  • 1 flax egg
  • 2 tablespoons olive oil
  • 1/2 teaspoon chili flakes
  • 1/2 yellow onion
  • 3 cloves garlic
  • 1 1/2 cups cooked lentils
  • 1/4 cup vegan Parmesan
  • 2 tablespoons coconut flour
  • 1/4 cup chopped cilantro
  • 1 tablespoon tomato paste
  • 1 teaspoon salt
  • Cracked pepper

Preparation

  1. Preheat oven to 375 degrees Fahrenheit

  2. Sauté onion, chili flakes, and garlic until fragrant and onion is soft

  3. Throw everything into a food processor and pulse until just combined

  4. If the mixture is too wet, add 1 more tablespoon of coconut flour

  5. Form into balls and place in the fridge for 30 minutes

  6. Sauté the balls on the stovetop until browned on all sides and transfer to a parchment-lined cookie sheet

  7. Place in the preheated oven for 20 minutes

Tips

  1. This recipe yields about 10 meatballs, adjust flour if mixture consistency varies
