Vegan Lentil Meatballs
Ingredients
- 1 flax egg (1T flaxseed ground + 2.5T water)
- 2 tbsp olive oil
- 1/2 tsp chilli flakes
- 1/2 yellow onion
- 3 cloves garlic
- 1 1/2 cup cooked lentils
- 1/4 cup vegan Parmesan
- 2 tbsp coconut flour
- 1/4 cup chopped cilantro
- 1 tbsp tomato paste
- 1 tsp salt
- Cracked pepper
Preparation
Preheat oven 375.
Sauté onion, chilli flakes, and garlic until fragrant and onion is soft.
Throw everything into food processor and pulse till just combined.
If it’s too wet, add 1 more tbsp coconut flour.
Form into balls and place in fridge for 30 minutes.
Sauté balls on stove top until browned on all sides and transfer to parchment lined cookie sheet and place in preheated oven for 20 minutes.
