Vegan Lentil Meatballs with Pasta

Ingredients

  • 1 flax egg
  • 2 tablespoons olive oil
  • 1/2 teaspoon chilli flakes
  • 1/2 yellow onion
  • 3 cloves garlic
  • 1 1/2 cups cooked lentils
  • 1/4 cup vegan Parmesan
  • 2 tablespoons coconut flour
  • 1/4 cup chopped cilantro
  • 1 tablespoon tomato paste
  • 1 teaspoon salt
  • Cracked pepper

Preparation

  1. Preheat oven to 375°F.

  2. Sauté onion, chilli flakes, and garlic until fragrant and onion is soft.

  3. Throw everything into a food processor and pulse until just combined.

  4. If it is too wet, add 1 more tablespoon coconut flour.

  5. Form into balls and place in fridge for 30 minutes.

  6. Sauté balls on stovetop until browned on all sides and transfer to parchment lined cookie sheet and place in preheated oven for 20 minutes.

  7. Serve with your favorite pasta, tomato sauce, and more vegan cheese.
