Spiced Potato Fries with Roasted Garlic Hummus

Ingredients

Fries

  • 2 sweet potatoes
  • 2 yellow potatoes
  • 1-2 tablespoons grape seed oil
  • 1-2 tablespoons French fries spice mix

Hummus

  • 2 cups chickpeas
  • 2 tablespoons tahini
  • juice of 1 lemon
  • salt
  • cumin
  • paprika
  • 4 roasted garlic cloves
  • water as needed

French fries spice mix

  • salt
  • onion
  • paprika
  • pepper
  • garlic
  • curry mix

Preparation

Fries

  1. Preheat oven to 400 F (200 C).

  2. Cut peeled potatoes into even strips as evenly as possible.

  3. In a bowl, mix together oil and spices.

  4. Add potatoes and use hands to toss them in the spice mix until evenly covered.

  5. Bake on a lined baking sheet for 50-60 minutes, stirring once or twice.

Hummus

  1. Roast garlic cloves with a little oil until fragrant.

  2. Blend chickpeas, tahini, lemon juice, salt, cumin, paprika, roasted garlic, and some water until smooth.

Tips

  1. Choose potatoes of similar shape and size for even cooking.
