Spiced Potato Fries with Roasted Garlic Hummus

- 2 sweet potatoes
- 2 yellow potatoes
- 1-2 tablespoons grape seed oil
- 1-2 tablespoons French fries spice mix
Hummus
- 2 cups chickpeas
- 2 tablespoons tahini
- juice of 1 lemon
- salt
- cumin
- paprika
- 4 roasted garlic cloves
- water as needed

Preparation
Fries
Preheat oven to 400 F (200 C).
Cut peeled potatoes into even strips as evenly as possible.
In a bowl, mix together oil and spices.
Add potatoes and use hands to toss them in the spice mix until evenly covered.
Bake on a lined baking sheet for 50-60 minutes, stirring once or twice.
Hummus
Roast garlic cloves with a little oil until fragrant.
Blend chickpeas, tahini, lemon juice, salt, cumin, paprika, roasted garlic, and some water until smooth.
Tips
Choose potatoes of similar shape and size for even cooking.
